Hangover Soup Recipe Korean Haejangguk

Hangover soup, also known as Korean Haejangguk, is a traditional Korean soup that is said to be a cure for hangovers. Ingredients:

  • 1 lb. beef brisket
  • 10 cups water
  • 1 tbsp. vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp. soy sauce
  • 1 tbsp. red pepper flakes
  • 2 tbsp. doenjang (Korean soybean paste)
  • 1 tbsp. gochujang (Korean chili paste)
  • 2 cups napa cabbage, chopped
  • 2 cups Korean radish, chopped
  • 1 cup bean sprouts
  • 1/2 cup green onions, chopped
  • 2 eggs
  • 2 cups cooked rice

Instructions:

  1. In a large pot, add the beef brisket and water. Bring to a boil and reduce heat to low. Let the brisket simmer for 1-2 hours until tender.

  2. In a separate pan, heat vegetable oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Cook until fragrant, about 2-3 minutes.

  3. Add the cooked onions, garlic, and ginger to the pot with the beef brisket. Add soy sauce, red pepper flakes, doenjang, and gochujang. Simmer for another 30 minutes.

  4. Add chopped napa cabbage, Korean radish, and bean sprouts to the pot. Let simmer for another 15-20 minutes until vegetables are tender.

  5. In a separate pan, scramble 2 eggs and add to the soup.

  6. Serve the soup hot with cooked rice on the side.
